I have found that the Flair Pro 2 does not squeeze out all of the water, even when the lever is pushed all the way through. The result is a messy puck to knock out. With this tool, you can place the used portafilter into the base and press down on the dispersion screen with the plunger. This will squeeze out most of the water so you can cleanly knock out the puck. This is helpful if you want to do a quick wipe and pull another shot immediately, or if you just want less liquid in your knock box. Water does come out of the top of the portafilter when pressed, hence the funnel section on the sides. Be careful when using. I recommend heating the portafilter, pressing the plunger in, and rotating it to make it easier to pull out.
