We needed this to poke a bunch of holes in the skin of a piece of pork, as a part of the process in making Chinese Crispy Pork. For the extra hardware, you'll need 15 small 1.25 inch finishing nails, which are designed to stick out about 10mm from the bottom of the tenderizer. Note == A word of caution. As with any mechanically tenderized meats, **you must ensure that you cook them long enough at a sufficiently high enough temperature to kill off any bacteria** which the tenderizing process pushes into the middle of the meat.
