This cutter uses a ratchet connected at the pin joint of the knife blade. While the blade is lifted the ratchet drives a rack joined to the cutting board with the help of a gear train. By pressing the knob at the back frees the bevel gear and the board can be brought back, while the spring at the knob (not shown) keeps the bevel gears in contact when not pressed.
