This is a komaita and its purpose is to help with getting consistently sized noodles when you are cutting homemade soba/udon which, too few folks do. Buying one made from exquisite wood and perfected by a master craftsman is another option and is borderline encouraged to keep traditions and craftmanship alive but if you ain't made of dough (totally intended) this is quite possibly a good alternative to tide you through your noodle making journey. p.s. I suppose it is possible to use this to cut linguini too.
