I like to carry these little Victorinox paring knives in the woods with me. They are very good quality steel for the price and can be made dangerously sharp with a proper sharpening jig (I prefer a 20 degree angle for anyone wondering). Unfortunately because these knives are made for the kitchen they do not come with any type of blade protection. I found this well made blade guard by LoboCNC and did a little CAD work on it to make it fit nicely on my pocket or a thin belt. I recommend printing this model with tree supports!
